Two ingredients team up to make this silky soft-serve style ice cream
Hey y’all!  It’s reveal day for the SRC (Secret Recipe Club).
Have I got a doozy for you today -  rich, silky, soft-serve style ice cream made with just one ingredient. That’s right – you don’t need cream, sugar, eggs, or an ice cream maker.
So…what is this magic ingredient that whips into a perfectly dreamy frozen delight?  Bananas, my friends, bananas!
This month, I received La Phemme Phoodie  as my secret blog.  Wendy’s description of herself reminded me of Clark Kent/Superman – she’s a mild mannered attorney by day, and food fanatic by night!  Her blog is about life as a Philly “Phoodie”.  When she discovered she had an intolerance to wheat and eggs, she took the plunge into the world of gluten free baking.  She shares all sorts of delectable treats on her blog, both sweet and savory, and you’d never guess they were gluten free!
I had planned on making her butterscotch oatmeal cookies , which were very intriguing because they contain beans (yes, beans) as the secret ingredient, they’re healthy, and they got rave reviews from her taste testers.
But then I saw it - magic one ingredient ice cream !  Holy Cow!
It’s as simple as 1-2-3 (literally – slice, freeze and whirl).  Yes, give a frozen banana a spin in the old food processor, and it morphs into this incredibly silky ice cream.  And it’s healthy to boot!
Since frozen bananas and chocolate make such a nice couple, I couldn’t resist adding a bit of Nutella.  Oh my goodness….oh my goodness!  Watch out Ben & Jerry’s, chunky monkey has competition!
So, if you’ve got some speckled bananas hanging around in your kitchen, freeze them quickly, and make a batch of this luscious, soft, ice cream.  In fact, grab the kids and have them help!  The flavor possibilities are endless!  Click here for a few ideas.  Experiment using a combo of fruits too:  mango/banana; blueberry/banana; strawberry/banana…

makes 2-3 servings
Magic Nutella Ice Cream
  • 4 ripe, speckled bananas, sliced into 1/2 " slices
  • 3 tablespoons Nutella
  • 2 tablespoons chopped, skinned, toasted hazelnuts, for garnish
  1. Line a baking sheet with foil or parchment paper.
  2. Lay banana slices, cut side up, in a single layer on the sheet.
  3. Pop the sheet into the freezer an hour or so until they are frozen solid.
  4. Plop the frozen banana slices into your food processor or a powerful blender.
  5. Process, stopping periodically to push the mixture down into the bowl.
  6. It will look chunky for a while, but keep stopping and pushing the mixture down, then process until all at once there is a glorious, creamy, soft ice cream!
  7. Add the nutella and process briefly to blend, then mix in the nuts with a spatula, or simply sprinkle on top just prior to serving if you prefer.
  8. Serve right away (my preference) if you like soft serve ice cream. For firmer ice cream, cover and freeze to enjoy later.
