Almond Joy Bites – little balls of double chocolatey, nutty goodness

Be warned my friends.  These are addictive –  I inhaled almost an entire batch of these today.  So embarrassing.

I knew I was a gonner before I even made them.  Double chocolate = double trouble.

Make them and you’ll be tempted to eat the whole darn batch too.  Lucky for you these are healthy and delicious rolled into one.   So if you’re having one of those days when you want need a sweet, chocolatey treat, you might as well gorge on these!

Almond Joy Bites

Prep Time: 10 minutes

Total Time: 20 minutes

Yield: about 24 - 1\\\" size bites

Ingredients

  • 1 cup old fashioned oats
  • 2 tablespoons chia seeds
  • 1 1/2 rounded tablespoons Dutch process cocoa powder
  • 1/4 cup sliced almonds, toasted and finely chopped (the food processor is perfect for this)
  • 3 tablespoons nonfat dry milk powder
  • pinch of sea salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup creamy almond butter, heated to soften, and cooled slightly
  • 1/4 cup + 2 tablespoons honey
  • 2 tablespoons chopped dark chocolate
  • ground almonds and/or cocoa powder for rolling bites in

Instructions

  1. Place almond butter in a glass bowl and microwave it on high about 1 minute, until it begins to melt.
  2. Remove the bowl from the microwave.
  3. Add the honey and vanilla to the bowl, and whisk together until smooth and well combined. Set aside.
  4. In a large bowl, whisk together the oats, chopped almonds, chia seeds, nonfat dry milk powder,cocoa powder, and salt.
  5. Add the almond butter mixture to the oat mixture, and stir to combine.
  6. Add the chopped chocolate, and mix well with your hands to combine.
  7. Lay a piece of waxed paper on your work surface.
  8. Scoop dough with a 1" scoop, then roll the dough into a smooth ball shape with your hands. Lay the balls on the waxed paper.
  9. When all the balls are rolled, roll them in finely chopped almonds, or a mixture of cocoa powder and chopped almonds.
  10. These can be enjoyed at room temperature, or chilled in the refrigerator. Keep tightly covered so they stay nice and moist!

Notes

I found that after the bites were stored a day in the fridge, they weren't as moist as they should be. So I increased the honey by 2 tablespoons (originally it was just 1/4 cup honey).
